Mumma's Slow Cooked Lamb Shanks

Our family favourite slow cooked shanks - Mumma style
Ingredients

4 lamb shanks
-
3 TBS One hungry mumma lamb seasoning
-
Salt and pepper to taste
-
2 TBS local honey
-
2 Cloves garlic
-
1 Red onion
-
1 Capsicum
-
500 - 600 gms mixed fresh tomatoes

1 Cup dry white wine
-
Juice of 1 lemon

3 TBS One hungry mumma, Spiced pumpkin chutney

Olive oil for frying

30 gms butter
Directions
Heat oven to 170 deg
Mix together in a zip lock bag or bowl shanks, honey, 2 TBS lamb seasoning, salt and pepper.
Massage shanks in bag like you are in love.
Heat olive oil in a pan and brown shanks on both sides.
Remove shanks onto a plate and melt butter in pan.
Add onion and garlic and fry for 2 minutes.
Add capsicum and left over 1 TBS of lamb seasoning to pan and fry for an extra 2 minutes or until starting to soften.
Add wine to pan and reduce liquid to half, this may take a few minutes.
Add tomatoes to the pan along with the shanks.
Squeeze lemon over shanks.
Give a good mix around and transfer to a oven safe dish with lid.
cook for 1.5 hours.
Remove from oven turn shanks and add pumpkin chutney. Spoon juices over shanks and return to oven.
Cook for additional 1.5 hours or until nearlly falling off the bone.
Serve with crunchy potatoes, Peas and a little fresh mint.

Recipe Note
For a delicious side dish
Chop kipfler potatoes in 3 and par boil until just going soft.
Transfer to an oven safe dish and cover in olive oil and salt and pepper. We used garlic and rosemary oil.
Bake at 230deg until crunchy (approx 30 minutes)
Mix crunchy potatoes with steamed or microwaved peas and shredded fresh mint.
