A family favorite on the Christmas table or at a BBQ. Perfect with cold meat.

One Hungry Mumma
Our family's favorite potato salad reciepe.
750 gms potatoes
2 TBS olive oil
Salt and Pepper
½ cup Whole egg mayo
2 TBS Honey wholegrain mustard
1 TBS Dijon mustard
3 TBS capers
Small handful of dill chopped finely
2 small spring onions chopped
100gms of prosciutto
Slice prosciutto and cook until crispy in a non stick pan with a little olive oil.
Cut potatoes into small quarters or large cubes
Place into a large pot of cold water covering potatoes, add 1 TBS salt and bring to the boil.
Once water has come to the boil reduce to a simmer and cook for approx 8 - 10 minutes or until a skewer just inserts into the potato but does not break it apart.
When potatoes are cooked drain water and add olive oil and a little salt and pepper to taste. Allow to cool.
While potatoes are cooling mix together mayo, mustards, capers, dill and spring onions.
When the potatoes are cold. Dress the potatoes in the mayo mixture and top with crispy prosciutto.
